After 7 months of thinking that my fingers are too fat for a violin fingerboard, suddenly, as I start to try double stops, they have suddenly become too small to cover 2 stings at once?!?!?
I'm beginning to question the existence of a certain higher being!
I am amazed at how old people of my age are.....

I thought the same thing about my 130 yo. violin. Comparing that one and my Chinese violin, there is a difference in string seperation. The old Caspar daSalo measure's 50mm at the nut, between string's and 110 mm at the bridge. The Chinese fiddle measures 50mm at the nut, but at the bridge measure's 114mm between string's. I find the Chinese violin play's a little easier.
You wouldn't think that 4mm would make that much difference, but it doesn't take that much to notice.
Most double stop's are played on two string's anyway, there aren't many time's when I have to cover two string's with one finger, but it happen's. I suck at double stop's to begin with, I don't spend enough time practicing them.

ok, so the only reason to cover two strings is if you are playing the same posistion on both strings. So to play both strings you need to tip the lower string and pad the higher one on the same finger, like rolling up. I dont have this problem since my fingers are shrek sized I can easily tip two strings and can even pad a chord if need be. But then its like a bull in a china shop to play single strings for me! haha, bumpin into everything!

yep! Tried that many times - no success
I'm only able to do exactly the thing that Jim does not recommend: put a finger tip more on one string, but i can't even get the other flat or sharp - i can only get a sqealing "harmonics" on it
