I thought it was called spiccato when one does notes by bouncing the bow, but I'm pretty shaky on proper violin terminology.
After watching the vid, I had to look to see if perchance Jascha Heifetz did a version of Orange Blossom Special. Sad to say, couldn't find one.
But I did find this, which is at least somewhat entertaining.
