About 30 year's ago I did some remodeling work for a Doctor. He had a grand piano that he played everyday. He told me that his physical therapist told him that playing piano was one of the best thing's for arthritis because it kept the finger's moving, closing and opening fast. No real strength was required. He didn't squeeze tennis balls.

Not freshly chewed in half, I hope!
Also, I think the clothespin exercises for double-jointedness would help with general finger strength as well. As for flexibility, I spend a lot of time stretching my fingers, because they tend to cramp up easily [not sure if that is the double-jointedness or the fibromyalgia].
