@docredrock -
Welcome to the forum!
How long have you been playing the violin?
Many of us have struggled with the same problems.
I had to play like I didn't have a left thumb for a while - pretended it was dead. That prevented me from squeezing my hand.
For trouble playing on lower strings - it could be the way you hold your violin. Check out the Fiddlerman tutorials (link at the top of the forum page).
We can't tell what you are doing without seeing it, but there's good suggestions in these related threads:

@docredrock Everyone and their mother has the same left hand issue when on the G string. Wait till you get up to the 3, 4, 5, 6, 7 ....positions on the G and sometime on the D string. It then is even less flexibility. I tell my son Thomas he MUST bring in his elbow more and more every position he goes up when playing in the G. But it is still much less flexibility than higher strings. It really is something you have to practice until the cows come home to make the notes sound like you are playing in first position on higher strings.
