I'm just curious how they play the violin on some sweet or sad songs, are they playing the chords?

Well, usually sad songs are played in minor keys as you probably know. Many pieces are played using chords, double-stops or just moving chord notes such as arpeggios played in varying rhythms. Depends of course whether or not you have an accompaniment or not.
