Ashokan Farewell. There's another by the same guy (Jay Ungar) called The Lover's Waltz that I'd like to learn as well (I actually like it better than Ashokan Farewell, but I can't find the sheet music for free).
There's a tutorial on YouTube by Lora Staples for The Lover's Waltz that is very good. No free sheet music, though...
Lora has recently opened up her Fabulous Fiddle Fundamentals online course for those of you who (like me) prefer a structured program.
ETA: There's a version at The Session that claims to be the same song...Not having seen the original, I can't vouch for the accuracy, but maybe it would get you started.

Awesome! Thank you, Cat. I had planned on buying the duet + piano sheet music for it at some point (my wife plays the flute and my mother-in-law plays the piano), but this is great! Thanks for sharing.
My mother-in-law gave me a CD of James Galway (famous flute player) with Jay Ungar and Molly Mason and The Lover's Waltz is on there. It's an excellent listen: A Song Of Home: An American Musical Journey
