There's MANY tutorials on YouTube, from the easiest beginner to more advanced, for this slightly 'over-done' Turkey tune. 

"Turkey in The Straw", tutorial from from Casey Willis! 

"The Thanksgiving Reel", composed by Frank Ferrel - performed by Patti Kusturok!

Frankferrel.com has some great fiddle tune collection books to buy.  I've taken a couple Fiddle Hell workshops of Frank's - great teacher & fiddler! 

"Thanksgiving Waltz", by Jay Ungar & Molly Mason! 

"Gobble Gobble", by Mathew West.
