How long does it take for a new violin to "break in"?

I hear that most new violins need at least 5 years for the wood to age and bring out a deep/warm sound, depending on usage. I practice 5-7 hours a week, at this rate, can anyone predict how long it will take for it to mature?

I don't think anyone can predict how long it will take to get it's maximum break-in but you can definitely expect it to get better with time.

How long it takes for an instrument to break-in depends also on the instrument, the thickness and the density (hardness) of the wood as well. 
Secondly, how hard and often you play. If you play lots of chords, accents, FF, etc. you can expect it to play-in even faster.

The good news is that if you buy a new instrument chances are that it will become better with time provided it is not made too thin to begin with to have that open played in sound from the start which I must warn against. These type of instruments can worsen with time. fish
