The foam and other shielding is most likely to stop the mic from picking up the player's breath.
The top picture looks as though the mic is touching the bridge. I'd be surprised if that's right, although it's probably ok from the mic's pov if the foam is thick enough. From the bridge's pov, it might even slightly dampen the high frequencies in a pleasant manner.

Interesting observations, I cannot imagine better explanations. I did send email to the band, asking for clarification. I haven’t heard back, perhaps because I wrote in English, not German.
I have never consider the fiddler’s breath as an issue. Maybe I now need to add one more item to the list of things to think about while fiddling -- as though I don’t have too many already...
Maybe I need to cut down on all that wild panting and gasping when I get rocking!
