I saw a violin retailer who said that he would set up an instrument as a violin or a fiddle at the purchaser's request.  What's the difference?

Oftentimes fiddlers prefer the sound of steel strings and want a flatter bridge to make doublestops easier. You should ask the retailer what the options are. In the end, it's nothing that can't be swapped out later.
