A few suggestions. I’m good with whatever Christmas tune Fiddlerman chooses.
Just giving some video examples—not suggesting we play the versions in these videos. Fiddlerman always does excellent arrangements of whatever tune he chooses, with a mind to accommodate various skill levels.
1) Star of the East is a slow tune, with a simple melody. Example below is someone doing a cappella with four-parts--gives a good idea of how it could sound.
2) O Come, O Come Emmanuel has been suggested several times throughout the years, and was voted for often when we voted for preferences. Just a neat version played by cellos in this example:
3) It Came Upon a Midnight Clear can be played fast of slow. Example played by a string quartet, who starts by playing it slow, and then speeds it up for the last part.
Characterize people by their actions and you will never be fooled by their words.

I was in the barber shop last winter and this came on the radio while I was waiting. Fell in love with the happy bouncy holiday tune.
It's called Candy Cane Lane by "Sia." (I never heard of her because I'm an old guy!) Julia Simeone put together her own version and it sounds great.
It's probably too difficult unless Fiddlerman can make it easy. I would love to hear the Fiddlershop group do this one - Pierre, Gibbles, and Gabby as a treat for us.

Thank you @SharonC for reaching out to us. We have been so busy with all things violin that we just forgot about our friends here on fiddlerman. With regards to a Christmas Song, I think Thomas would enjoy just about anything, especially something fun, cheerful and just simply Christmasey. I know that doesnt help break it down much, but being a young man, he enjoys something that embraces happiness and vigor.
