i recently opened up my violin (cecilio cevn-1bk) out of curiosity. mainly because im interested in the pickup, it sits right under the bridge and is soldered to the little board, can it be changed out?

Not sure about the cecilio - but on the EV I have, the pickup is mounted from the top side  - so to change it I would have to (a) open the electronics compartment on the underside, and unplug the lead from the pickup that goes into the electronics assembly (don't know if yours has a plug or is soldered directly, of course), then (b) remove the bridge, carefully lever-out the pickup (assuming they haven't glued it down!) and then extract it and its attached cable.  On my EV the cable from the pickup goes through a small hole in the body directly under the bridge and into the electronics compartment.

I would take a wild guess that the Cecilio would be similar....
