Hi this has been bothering me for a while now. How do I know which string to use when playing high notes like the 4th, 5th, 6th note and so on.
Like for example, Vivaldi's Four Seasons - Winter has a lot of high notes but I don't see any violinist on youtube using E string all the time on every high notes.

It's kind of complicated. You stay up in positions when it's practical and you shift when that is better. You base shifts on what you want to achieve. Often a skilled player will shift or stay dependent on what works best musically as well as technically. Experimenting is a good way to determine which is best. 🙂
Post some specific parts of a sheet music and I'll give you my advice for that section.
